OK - what do you do when a non-fired piece breaks after you dry it?  Is there anything I can do to salvage the clay?

many breaks can be repaired with just water if clay is unfired, moisten both parts of break, press together when softened, use a damp brush to smooth. You can also use AC 650 paste to mend unfired items or AC oil paste to mend peices that have been fired.

DaCat has it right there. Before firing water, paste and/or syringe type will work to do repairs.

Only use the Oil Paste for metal to metal joins or repairs after firing.
Frequently, if no finishing, burnishing or brushing has been done, I have successfully done repairs on a fired piece with paste or syringe type

What can I do if the piece broke in several pieces and can't be pasted back together?  Can I make paste or a slurry out of the clay by adding water?

Making a paste or slurry or slip out of clay works just fine.
I just in the last hour or so repaired a fired piece with syringe and paste and torch fired it - it came through just fine.
Sometimes several thin coats of paste works lots better then 1 thick coat. Once you have repaired a piece, it tends to be fragile until fired.
