The memory wire for rings appears to come in one size, much larger than the ring size needed. Is it possible to decrease the size of memory wire?

I think when you add beads, you will automatically decrease the "working" diameter of the ring. In fact, when designing chokers, bracelets and such, you actually have to allow for the size of the beads you use to compensate for this affect. Wish I could draw a picture!
