the description for
all but the copper tags indicates they have rolled edges. Is this an omission, or do the copper tags not have a rolled edge? Thanks!

That is correct, only the stainless ones (49-600-15 and 49-600-20) and the 49-601-20 Brass ones have the rolled edge.
The copper and sterling ones are flat stampings, without the rolled edge.
This includes the similar copper shapes like the 44-780-03 tablet as well as the 44-780-01 and 44-780-02 you ask about.
