The May 2008 issue of Jewelry Artist (the magazine formerly known as Lapidary Journal) has a nationwide listing of classes, and it's on their website as well:

SNAG (the Society of North American Goldsmiths) has a list of universities and colleges with jewelry and metals-related programs on their website.  You'll need Excel to open it:
