I've never (well, since elementary school) played with clay, but I have wonderful fantasies about the stuff I'll eventually make from acs; I was thinking, though, that I should start with a polymer clay first.  Which is the most similar to acs in use?

I don't have a sense that the workability of any of the polymer clays is much like the ACS. They tend to be stiffer and sort of rubbery.
I would recommend an airdrying clay that I have seen in the crafts stores. It comes in white and terracotta. You work it and then let it dry. There are several brands on the market.
The biggest considerations is working small scale with the ACS and keeping the moisture balanced. I generally recommend at least a 1/2 day workshop with the ACS to learn how to handle it. There are a number of classes and instructors around the country

There is a great paper clay that you could start with, its easy to add acrylic paint or ink to tint and makes lovely flowers.
